Mince Pie Breakfast Bowl

Since Christmas is just around the corner, I thought it was about time I shared a festive recipe. Perfect for the Big Day (and everyday), this mince pie breakfast bowl is simple, quick and delicious. Give it a go and tag me so I can see your creations!

Mince Pie Madness

As you’ve probably realised by now, I LOVE mince pies. But for me, the best bit has to be the filling. (Side note: why is it called “mincemeat“?). I made a batch last week and have been using it in everything; yoghurt bowls, nicecream, straight from the jar or in this recipe. You can use a storebought mincemeat or make your own by simply chopping up three red apples (no need to peel) and adding to a pan with 100g raisins/ sultanas/ a mix of the two, the juice and zest of one medium orange, 2 tbsp maple syrup and some cinnamon, nutmeg, clove and ginger. Bring to the boil and leave to simmer with the lid on for 20 minutes or so, until soft but not mushy.

Mince Pie Breakfast Bowl

A super simple and delicious bowl to get those christmas vibes going whenever you want!

Servings: 1
For the chia pudding
  • 25 g chia seeds
  • 125 ml plant milk of choice
  • 1 tsp ground flaxseed
  • 1 tbsp vanilla protein powder
  • Cinnamon, to taste
To assemble
  • Mincemeat (homemade or storebought)
  • Granola
  • Vanilla soy/ coconut yoghurt
  • Plus any other toppings you fancy!
  1. Start by stirring together all the chia pudding ingredients in a jar the night before. Leave to thicken overnight.

  2. In the morning, stir the chia pudding and loosen up with a few tbsps water until it has reached your desired consistency.

  3. Spoon the chia pudding into a bowl, swirl through some yoghurt and add some mince pie filling followed by any other toppings. Finish with a dusting of cinnamon and enjoy!
